Hamburger Goulash

This hamburger goulash is going to be a staple in your home…GUARANTEED! Please enjoy!

Serves: 6

Prep: 5 minutes; cook time: 30 minutes

Here’s what you’ll need:

goulash

2 pounds ground beef

1 onion, chopped

2 cups water

3/4 cup ketchup

2 Tbsp Worcestershire sauce

2 tsp paprika

2 tsp sugar

1 tsp salt

1/2 tsp ground mustard

1/4 tsp garlic powder

2 Tbsp all-purpose flour

1/4 cup cold water

Directions:

In a Dutch oven, cook beef and chopped onion over medium heat until meat is no longer pink; drain…. by the way…we LOVE ONIONS!!

Add the water…..

Ketchup…..

Worcestershire sauce…..

Bring to a boil. Reduce heat; simmer, uncovered for 20 minutes.

In a small bowl, combine flour and cold water until smooth…..

Stir into the meat mixture…..

Bring to a boil and stir for 2 minutes or until thickened. Serve with pasta of your choice! We chose to use small shell pasta!

Beef and Broccoli with Peppers

Have I stated how much I love my slow cooker?? Well, I LOVE MY SLOW COOKER! Hopefully you could “hear” me 🙂 I love the slow process of cooking, just goes to prove that “patience is a virtue”, especially when we prepare meals for the ones we love. I found a recipe that I changed, of course, and this recipe has been tried so many times by other cooks and websites, that I finally thought I would have a go at it and give it a try. I love Beef and Broccoli and I decided that if I try a little bit of Capsicum (bell peppers) in my recipe at the end, it would have even better flavor…so that’s what I did. I sure hope you enjoy! I sure as heck know that we sure did! 😉

Makes: 4-6 servings

Here’s what you’ll need:

1 cup water

1 beef bouillon cube

1/3 cup brown sugar

3 cloves garlic, minced

1/3 cup soy sauce

1 Tbsp sesame seed oil

1/2 tsp ground ginger

1/2 tsp crushed red pepper flakes

2 pounds beef stew meat

7-8 mini sweet peppers (bell peppers), sliced thinly (or equivalent to 2 regular-sized, sliced bell peppers)

2 Tbsp cornstarch

16-24 oz. broccoli florets (frozen)

Directions:

Place liner in slow cooker, or spray with non-stick cooking spray. Turn slow cooker on LOW and place the beef stew meat in the slow cooker along with the soy sauce….

Brown sugar…..

Sesame seed oil…..

Ground Ginger, Crushed red pepper flakes, water, and beef boullion cube…..

Toss (mix well) to coat. Cover and cook on LOW for 7-8 hours….

After the 7-8 hours of cooking time, remove about 3 Tbsp of sauce from the slow cooker and combine with the 2 Tbsp of cornstarch to make a slurry…..

Pour and stir the slurry into the beef mixture in the slow cooker and let thicken before adding remaining ingredients……

Add broccoli (as much as you want and you don’t have to thaw broccoli)

Stir to combine again and continue to cook on LOW for 15-20 minutes to thicken the sauce…. (this also cooks the broccoli to a desired tenderness and the same for the bell peppers)…..

During this time you can (follow the product instructions) make your rice. We used brown rice. This dish has great flavor without excessive amounts of MSG….

Deep Dish Pizza

It turned out to be a great day and since the Spring semester has started, I needed to make a dinner that wasn’t going to take up my entire evening. My brain needs rest…ha! So Josh and I decided on a pizza, but what kind? We agreed on a deep dish and OMG, that’s all I can say about this pizza. I have looked over and over for a great pizza dough recipe and I could not find one. I order from King Arthur Flour all the time and I thought I might as well spend the extra money and try out their pizza crust mix. I did and we fell in love tonight. This dough is very “fluffy” and has great flavor. Please make sure that when you bake the pizza, you can turn the pizza pan every 10 minutes or so for even baking and so that the dough can bake evenly. We sure hope you enjoy!

Makes: 12″ pizza (2-4 servings) ~ depends on the appetite

Bake Time: 18-25 minutes

Here’s what you’ll need:

1 (12-inch) deep dish pizza pan

1 box pizza crust mix

2 Tbsp olive oil (for the dough)

1 1/4 cups lukewarm water (for the dough)

1/2 pound ground beef, cooked and drained

1/4 onion, chopped

1/4 bell pepper, chopped

1/2 cup mushrooms, washed and sliced (I bought pre-sliced)

8-10 slices of pepperoni

pinch of borsari or italian seasoning

Shredded cheese

1 small can of tomato sauce

Directions:

Pre heat oven to 425 degrees. In a large skillet, cook ground beef until browned, then drain. Set beef aside. Prepare pizza crust mix according to package directions and place into greased deep dish pizza pan (we used 12″)….

Let dough rest for about 30 minutes prior to adding toppings (need the dough to “puff” up a little bit), then add tomato sauce….

Add onions, mushrooms, pepper, and other toppings (you can add whatever toppings you desire~these are just the toppings that Josh and I like)…

Place in pre heated oven for 18-25 minutes, turning every 10 minutes so the dough can bake evenly….

And the cheese is golden on top…(I usually add the cheese during the last half of the cooking time)….

Ryan’s Zesty Slow Cooker Chicken

I had a great family friend text me the other day. I looked at my phone and seen that they sent me a picture of the dinner that they were getting ready to enjoy. It was a chicken version of Italian Beef! I text back and told them that I wanted the recipe and I asked if I could change a couple of things and he said “Sure!” I changed a couple of things and Josh and I enjoyed it last night for dinner….It was fantastic! The Italian Dressing Mix that I used in this recipe is also located in the SPICES, RUBS, AND MARINADES category. Thank you so much Ryan for the recipe and I am definitely keeping this recipe for “get-togethers” too!

Makes: 6 servings

Here’s what you’ll need:

Zesty Slow Cooker Chicken 001

3 pounds boneless, skinless, chicken breasts

1 (16 oz.) jar pepper rings (pepperoncini’s)

1 Tbsp Cori’s Zesty Italian Dressing Mix (or a packet of Italian dressing mix)

1 cup water

pinch of salt and pepper to taste (optional)

Directions:

Like I always say, spray your slow cooker with non-stick spray or line your slow cooker with liners. As you can see, I use liners (makes for much easier clean up). Place the chicken breasts in the bottom of the slow cooker and turn the slow cooker on LOW.

Pour entire 16 ounce jar of mild pepper rings over chicken breasts….

Sprinkle Zesty Italian Dressing Mix evenly over breasts….

Add water….

Cover and cook on LOW for 8-10 hours…depends on your slow cooker (mine cooks fairly quickly)….

After it has cooked for the desired amount of time, (8 hours for mine), shred the chicken with 2 forks….

Meanwhile, we had 2 friendly doggies sniffing and watching me shred chicken for dinner…the brown dog is ours (out for his daily run with his friend)….

Place shredded chicken back into slow cooker and stir to incorporate the juices and seasonings… recover and let cook for another 20-30 minutes….

Serve just like Italian Beef, on a hoagie roll and top with some shredded cheese!
