Deep Dish Pizza

It turned out to be a great day and since the Spring semester has started, I needed to make a dinner that wasn’t going to take up my entire evening. My brain needs rest…ha! So Josh and I decided on a pizza, but what kind? We agreed on a deep dish and OMG, that’s all I can say about this pizza. I have looked over and over for a great pizza dough recipe and I could not find one. I order from King Arthur Flour all the time and I thought I might as well spend the extra money and try out their pizza crust mix. I did and we fell in love tonight. This dough is very “fluffy” and has great flavor. Please make sure that when you bake the pizza, you can turn the pizza pan every 10 minutes or so for even baking and so that the dough can bake evenly. We sure hope you enjoy!

Makes: 12″ pizza (2-4 servings) ~ depends on the appetite

Bake Time: 18-25 minutes

Here’s what you’ll need:

1 (12-inch) deep dish pizza pan

1 box pizza crust mix

2 Tbsp olive oil (for the dough)

1 1/4 cups lukewarm water (for the dough)

1/2 pound ground beef, cooked and drained

1/4 onion, chopped

1/4 bell pepper, chopped

1/2 cup mushrooms, washed and sliced (I bought pre-sliced)

8-10 slices of pepperoni

pinch of borsari or italian seasoning

Shredded cheese

1 small can of tomato sauce


Pre heat oven to 425 degrees. In a large skillet, cook ground beef until browned, then drain. Set beef aside. Prepare pizza crust mix according to package directions and place into greased deep dish pizza pan (we used 12″)….

Let dough rest for about 30 minutes prior to adding toppings (need the dough to “puff” up a little bit), then add tomato sauce….

Add onions, mushrooms, pepper, and other toppings (you can add whatever toppings you desire~these are just the toppings that Josh and I like)…

Place in pre heated oven for 18-25 minutes, turning every 10 minutes so the dough can bake evenly….

And the cheese is golden on top…(I usually add the cheese during the last half of the cooking time)….

Country Mornin’ Casserole

I have had the achy flu for the past couple of days…Yuck! but I made this breakfast casserole over this past weekend and it was a hit! I changed a few things (of course ;)) but it was definitely good! I added salsa at the end to spread on the top right before serving (no picture). This asks for 1/2 pound of country sausage and I decided that I’m gonna try and use a full pound next time and mix everything together before placing it in the oven rather than layering it…but either way…this was very fulfilling and I was asked to make it again. **You can also prepare this and refrigerate it the night before and take it out of the refrigerator 15 minutes prior to baking.

Cook Time: 50 minutes

Makes: 6 servings

Here’s what you’ll need:

1/2 pound country sausage (or mild/spicy pork sausage)

1 medium onion, chopped (I used green onion, it’s what I had in my fridge)

1/3 cup bell pepper, chopped (any color)

4 cups frozen hash browns, thawed about 16 ounces (I used boxed hash browns-cuts down on prep time)

2 cups shredded cheese (your choice-I used mozzarella)

3 eggs, beaten

1 cup milk

1/4 tsp black pepper

1/4 tsp salt

mild salsa, optional


Pre heat oven to 350 degrees. In a large skillet, cook sausage while breaking it up with a wooden spoon….

Depending what kind of sausage you use, drain off excess fat. In an 8x8x2-inch square baking dish, layer the hash browns….

In a bowl, combine eggs, milk, salt, and black pepper, whisk until throughly combined and pour over cheese….

Bake covered for 35-45 minutes, remove cover and bake for another 10-15 minutes or until a knife inserted in the middle has come out clean and the cheese has browned on top. Transfer to a wire rack to cool for approximately 10-15 minutes….

Taco Bake AuGratin

Today was a great day and I enjoyed this sun filled day with my sister and met a friend for lunch. I thought about what I was going to make for dinner tonight and I thought about mexican, needless to say, I was a little hesitant to try this dish that I found, but it actually had great taste and I added a couple of extra ingredients. This recipe was adapted from a Taste of Home cookbook and like usual, it was DELISH!! I am always interested in different ways to prepare a mexican dish and I think I have found another favorite. Please enjoy!

Makes: 4-6 servings

Here’s what you’ll need:

1 pound ground beef

1 (14.5 oz) can diced tomatoes, undrained

1 (11 oz-15 1/4 oz) can whole kernel corn, undrained

1/2 red bell pepper, chopped

1/2 white onion, chopped

1 pkg taco seasoning

1 cup shredded cheese

1 (4.9 oz) box of AuGratin potatoes (I discard the cheese powder that comes in the box)

1 pkg of McCormick four cheese potato seasoning

3/4 cup milk

1/2 cup water


In a large skillet, cook ground beef until no longer pink; drain fat…

Stir in the potatoes, corn, tomatoes, red bell pepper, and onion…

Add taco seasoning, potato seasoning, milk, and water…

Stir until all combined and mixed well…

Transfer to a 2-qt baking dish…

Cover and bake at 350 degrees for 60-70 minutes or until potatoes are tender. Sprinkle with shredded cheese. Bake, uncovered, 5 minutes longer or until cheese is melted and bubbly.

I served my dish with a dollop of sour cream and a little bit of shredded cheese.


Crock Pot Pizza

This has to be a family favorite in my house. I love making this and it is so easy to layer and cook. This can also be cut in half and baked in a 13x9x2 inch baking dish. I love pizza and my crock pot…what a better meal than this!?

Makes: 10 servings

Here’s what you’ll need:

1 pound ground beef

1 pound bulk italian sausage (old folks or bob evans brand)

1 garlic clove, minced

4 cups shredded cheese (mozzarella, pizza blend, mexican blend, etc.)

Toppings for your pizza:

  • Pepperoni
  • Onions
  • Mushrooms
  • Bell Peppers
  • Olives
  • Tomatoes
  • Pineapple
  • Ham
  • choose any toppings you wish

1 small jar pizza sauce 8-10 ounces)

1 jar spaghetti sauce (24 ounces)

3/4 pkg of kluski egg noodles

1 Tbsp Italian Seasoning


Cook Kluski noodles according to package directions and set aside.

In a large skillet, cook and brown ground beef and italian sausage over medium heat, drain fat…

Return cooked meat mixture to skillet, add pizza sauce…

add Italian Seasonings and minced garlic, reduce heat and let simmer for 10 minutes stirring occasionally. While the meat mixture is simmering, line the crock pot with a crock pot liner or use cooking spray, and set it to high. Cut up pizza toppings if needed and set aside…

The first layer will be some of the meat sauce (enough to thinly cover the bottom of the crock pot)…

2 cups (1/2 of a 4 cup bag) of shredded cheese…

Re-layer in the same order. The last layer should be shredded cheese…

Cover and cook on high until top layer of shredded cheese is melted and bubbly. The time duration (about 1 – 1 1/2 hours) depends on your crock pot.
