Crock Pot Mexican Chicken

Hey everyone! Sorry I haven’t been posting anything lately. Life is getting busier by the day, with school and work, I am having a hard time doing the things I love. AAAnnnnnyyyywwwwaaaayyyyy, enough about me, let’s get to what I love most…..FOOD! I decided that today was a throw it in the crock pot kinda day and I came upon making mexican chicken! This is made with ingredients that I had in the cupboard and the fridge. I sure hope you enjoy! Here it is:

Makes: 4 servings

Here’s what you’ll need:

1 lb. chicken thighs (raw)

1 Tbsp. taco seasoning

1 (10 oz) can RoTel Mexican w/Lime and Cilantro

1 tsp cilantro

1/2 tsp lime juice

1/2 onion, chopped roughly

1 -2 cups shredded mexican style cheese


First of all, make sure your crock pot is lined with a slow cooker liner or spray with a non-stick cooking spray.Turn the crock pot on LOW. Place raw chicken thighs in the bottom of the crock pot.

Add taco seasoning, cilantro, lime juice, onion, and RoTel. Cover with tight fitting lid and let cook on LOW for approximately 6-7 hours or until chicken is done. (Time usually depends on how quick your crock pot cooks, mine cooks quicker than most).

Once chicken is done, shred chicken with 2 forks and add shredded cheese cover again and turn crock pot to HIGH and cook for 20-30 minutes or until cheese is thoroughly melted. Spoon into flour tortillas (like a soft taco) or over tortilla chips for a great salad with a little mexican flair!

I also like to use these desired toppings:

  • Sour Cream
  • Tomatoes
  • Bell Peppers
  • Lettuce
  • Taco Sauce
  • Black Olives

The toppings are based upon preference.
