Junie’s Chewy Granola Bars

I usually buy the granola bars in the grocery store. My boyfriend Josh, is a health nut, but me? not so much. I like some of the healthy things, but when I made these granola bars from scratch….he told me NOT to waste money on the ones in the store. They were chewy AND have great flavor! Thanks Junie for this recipe! We love it and I hope all of you will enjoy them too!

Here’s what you’ll need:

1/2 cup butter, softened

1 cup packed brown sugar

1/4 cup sugar

2 Tbsp honey

1/2 tsp vanilla extract

1 egg

1 cup flour (we also like using whole wheat flour)

1 tsp cinnamon

1/2 tsp baking powder

1/4 tsp salt

1 1/2 cup quick cooking oats

1 1/4 cup chopped nuts (any variety)

1 cup chocolate chips

Directions:

In a large bowl, cream butter and both of the sugars until light and fluffy. Add honey, vanilla, and egg and mix well. In a small bowl, combine flour, cinnamon, baking powder, and salt and gradually add to creamed mixture. Stir in oats, rice krispies, nuts, and chocolate chips. Press into a 13x9x2 baking dish and bake at 350 degrees for 25-30 minutes or until the top is lightly browned. Cool on wire rack.
