I remember my dad making the best quick-to-eat meals I ever ate! He always had his own concoctions and they were always mouth watering and delicious. This dish is usually INTENSE in flavor, but I changed it up a little bit. I sure hope you enjoy!
Makes: 4 servings
Here’s what you’ll need:
2 Tbsp olive oil
1 medium onion, chopped
1 green, red, yellow, OR orange bell pepper ( color of your choice), chopped
salt and black pepper to taste
3 1/4 cups water
1 (8 oz) pkg red beans and rice
1 pkg angus beef sausage links (we prefer eckrich brand)
In a deep sided skillet, heat 2 Tbsp olive oil over medium heat.
Add the chopped onion and bell pepper, saute over medium heat for 3-4 minutes until onions become slightly translucent. While peppers and onions are sauteeing, slice the sausage links into 1/4-inch slices and add to the peppers and onions, continue cooking on medium heat for another 5-7 minutes. Add salt and pepper to taste.
Add 3 1/4 cups of water to sausage, pepper, and onion mixtureAdd (8 oz) package of red beans and rice mixture and bring to a boil. Reduce heat and simmer for 20- 25 minutes or until liquid is mostly absorbed stirring occasionally.
