Dry Rub

This is a basic dry rub. Therefore, this will flavor about 3 pounds of meat (about the same amount as 12 chicken breasts).

1 1/2 tsp of kosher salt or any coarse salt

1 bay leaf, crumbled

1 tsp dried sage

1/4 tsp freshly ground pepper

1/8 tsp ground ginger or allspice

1/8 tsp paprika (smoked)

1//8 tsp cinnamon

In a small bowl, combine all the ingredients. To use, rub onto meat such as (pork roasts, chops, cutlets, flank steak, chicken breasts, etc.) pressing to help the mixture adhere to the food, about 1 1/2 to 2 hours prior to cooking. Use about 1 tsp per 3/4 pound of meat or to desired taste.
