Cornbread Salad

6 slices of bacon, cooked and crumbled

1 cucumber, peeled, seeded, and chopped

1/2 red bell pepper, seeded and chopped

1 pint of cherry tomatoes halved (optional)

5 cups of cooked, crumbled cornbread

1/3 cup sliced green onions

1/2 cup whole milk

1/2 cup sour cream

2 Tbsp. ranch dressing mix

In a large bowl, mix together bacon, cucumber, red bell pepper, tomatoes, cornbread, and green onions. In a small bowl, whisk together milk, sour cream, and dressing mix. Pour over salad just before serving, toss gently to coat.
